We yearly organize well visited (approx 120 participants in 2011) scientific-industrial symposium in viticulture and oenology with international participations. The topics of the papers focus on actual problems in viticulture and oenology. Published papers are peer-reviewed.

COBISS.SI-ID: 258930432The aim of this study was to evaluate the influence of selected wine yeast strains on antioxidation potential preserving and increasing of primary varietal aroma of Sauvignon blanc. Microvinifications with five commercial wine yeasts strains (VIN7, QA23, Alchemy II, VL3 in Zymaflore Alpha) or their combinations were performed. During and at the end of alcoholic fermentation the concentration of gluthatione in wine samples was determined using HPLC with fluorescence detector and »on-line« pre-column derivatisation. Concentration of volatile thiols was determined at the end of alcoholic fermentation using GC-MS method. Analytical data were statistically analyzed.

COBISS.SI-ID: 3722600During the study content of aromatic compounds (volatile thiols, methoxypyrazines) and gluthatione were checked. Beside chemical analyses we also performed sensory, descriptive analyses of wine samples. Results showed positive correlation between volatile thiol 4MMP content and cat's pee odour intensity and correlation between volatile thiol 3MHA content and fresh tropical aroma intensity. Addition of IBMP methoxypyrazine showed positive correlation with intensity of green pepper aroma.
