?-terpineol, linalool, nerol and geraniol, monoterpenes in Gewürztraminer were determined in grapes, must and wine after treatment with pectolytic enzymes and ß-glucosidase. Concentrations were determined by SPME and GC-MS.The most abundant monoterpene was geraniol.Wine from must treated with the Lall enzyme was the most aromatic this was confrmed by chemical and sensory analysis.The wines produced from must treated chemically with enzymes showed higher concentrations of the monoterpene compounds compared with control although the sensorial analysis did not affrm this convincingly
