Antioxidative substances of tartary buckwheat sprouts and impact of Se and Zn on the sprout development, for improved nutritional value

The effect of trace elements and solar UV-B radiation was studied on buckwheat sprouts. The amount of UV-B and UV-A absorbing compounds was higher in UV-B treated plants in comparison to the plants, grown under reduced UV-B radiation. Dry weight of cotyledons and stems of cotyledons was the highest in sprouts, grown from seeds soaked in solution of Na-selenate + Zn nitrate and exposed to UV-B radiation. The Korean powder made out of tartary buckwheat sprouts contained more flavonoids (rutin) in comparison to Slovenian bread.

The content of polyphenols, flavonoids and tannins in common buckwheat (Fagopyrum esculentum) produced with various fertilization methods

The aim of our work was to find out, how the fertilization of soil, on which grows common buckwheat (Fagopyrum esulentum), influences the content of polyphenols, flavonoids and tannins in flowers, upper and lower leaves, and seeds of observed plant. Our results show, that the fertilization decreased the concentration oh the flavonoids and tannins in leaves, but not in flowers and in seeds. Fertilization had no effect on the concentration of polyphenols. The concentration of studied antioxidants in plants is followed in sequence: flowers>upper leaves>lower leaves >seeds.
