Abstract
The quality of olive oils depends also on presence of microelements and other trace constituents. Some elements are essential and necessary for living organisms e.g. I, Fe, Se, etc., whereas pesticide residues in oils are undesirable. Since data on such constituents for the olive oils of Slovenian Istra are scarce or not known at all, reliable analytical results for these components are urgently needed for nutrional and economic purposes. Simultaneously the vicinity of the sea could influence the quantities of iodine in olive oil and its cycle in this plant.
